Cattail pollen flapjacks

Cattail pollen flapjacks

Makes 10-12
1 cup cattail pollen or flowers
1 cup whole wheat flour
½ tsp salt
1 tbsp honey or maple syrup
1 egg
2 tsp baking powder
1 to 1 ¼ cups milk
4 tbsp oil
Combine dry ingredients in a mixing bowl. Gradually stir in egg, milk, honey & 2 tbsp oil to make a creamy batter. Cook flapjacks until bubbles form on a hot, greased griddle or pan. Turn & cook until brown.

Serve with butter & honey or syrup.
