Baked Pheasant Strips

4 pheasant breast halves -- skinned and boned
1 1/2 cups Italian bread crumbs
3 tablespoons Parmesan cheese -- grated
3/4 teaspoon garlic powder
1/2 cup vegetable oil

In a large plastic zip-top bag, combine bread crumbs, cheese, and
garlic powder. Pour oil into a small bowl. Place a breast between two
sheets of heavy plastic wrap. With a meat mallet, flatten breast meat
to 1/4 inch thick; cut into 1 inch wide strips. Do the same to
remainder of breasts. Dip strips in oil; place in bag with crumb
mixture and toss to coat. Remove; place on a greased baking sheet.
Bake at 350 degrees for 20 minutes or until golden brown. Serve with
Honey Dipping Sauce. (see recipe)
